Whether you celebrate it or not Easter is full of chocolate and family and Spring. SO grab a bunny and go feel the grass. Find an Easter Egg hunt near you and go all in! Eat chocolate bunnies and eggs. Grab a basket and fill it with cupcakes! Have yourself a merry little Easter!!!
Here is a fun cupcake recipe! Enjoy!
2 cups and a half of flour
2 spoons of cocoa powder
half a cup of unsalted butter
1 cup and a half of brown sugar
1 spoon of vanilla extract
Half a tea spoon of baking soda
half a tea spoon of salt
half a cup of single cream
3/4 of a cup of expresso coffee
Beat the butter in the mixer and add the eggs and sugar. The mix should be firm and fluffy. Add the vanilla extract and the baking soda, salt and beat everything until you get a firm paste. Reduce the mixer velocity and separately mix the four with the cocoa and the cream using a spoon. Add the coffee to the doe. Mix everything until its firm.Fill out the cupcake trays and take to the oven at a pre-heated temperature of 180ºC or 200ºC depending on the type of oven you have for approximately 25 minutes.
After the cupcakes are done you can add the toppings:
For the topping
1 can of condensed milk
1 packet of single cream
1 spoon of butter
1 spoon of cocoa powder
Mix all of the ingredients in a pan and slowly cook them in medium temperaure. With a wooden spoon, stir until it gets to the desired consistency, not to solid though!
This recipe usually gets you 25 cupcakes!!
